I made these for a coworker’s birthday using a recipe from Your Cup of Cake.
They were surprisingly easy. I thought the frosting would plop off into the chocolate but it never happened. Just make sure the cake is completely cool before you frost it, and give the frosting a chance to hang out for a little bit before you go dunking it in the chocolate.
The chocolate candy melts harden like a dream and these cupcakes looked nice until they were eaten the following afternoon. The only issue, I would say, is that they are difficult to eat in a dignified manner, not that there is anything so dignified about a cupcake. It was easiest to eat them upside down, actually.
Since last Wednesday I’ve made a tart, a cake, two batches of cinnamon rolls and four dozen cupcakes. I love baking, like really really love it, but I’m glad to have a break from it until Saturday!
